Homemade Hazelnut Chocolate

Ingredients:
1 cup raw hazelnuts
1/4 cup Earths Basket Cacao Powder
1/4 cup maple syrup or agave syrup (vegan option) OR honey (non-vegan option)
1/4 cup Earths Basket Cacao Butter, melted
1/2 teaspoon vanilla extract
Pinch of salt
Method:
STEP 1
Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and roast them for about 10 minutes, or until fragrant and lightly golden. Remove from the oven and let them cool slightly.
STEP 2
Once the hazelnuts are cooled, transfer them to a clean kitchen towel. Fold the towel over the nuts and rub them together to remove the loose skins. Some skins may remain, and that's okay.
STEP 3
In a food processor or blender, add the hazelnuts and process until they turn into a smooth hazelnut butter consistency. This may take a few minutes, and you may need to scrape down the sides of the processor or blender occasionally.
STEP 4
Add the cacao powder, maple syrup or agave syrup (or honey for the non-vegan option), melted coconut butter, vanilla extract, and a pinch of salt to the hazelnut butter. Process again until all the ingredients are well combined and the mixture is smooth and creamy.
STEP 5
Taste the mixture and adjust the sweetness or saltiness if desired, adding more maple syrup or salt as needed.
STEP 6
Pour the hazelnut chocolate mixture into a clean jar or airtight container.

If you prefer a smooth texture, the hazelnut chocolate is ready to be enjoyed as is. If you prefer a smoother consistency without any hazelnut pieces, you can strain the mixture through a fine-mesh sieve before transferring it to the jar or container.

Place the jar or container in the refrigerator for at least 1 hour, or until the chocolate is firm and set.
STEP 9
Once the homemade hazelnut chocolate is firm, it's ready to be used as a spread, drizzle, or filling in your favorite recipes.

Store the homemade hazelnut chocolate in the refrigerator for up to 2 weeks. Remember to give it a good stir before each use, as the oils may separate slightly.
