Acai Berry Cheesecake

Ingredients:
For the crust:
1 cup almond flour
1/2 cup pitted dates
1/4 cup shredded coconut
For the filling:
2 cups cashews, soaked overnight and drained
1/2 cup coconut cream
1/4 cup maple syrup or any other natural sweetener of your choice
1/4 cup coconut oil, melted
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 cup Earths Basket Acai Berry powder
For the topping:
Fresh berries (such as blueberries, strawberries, or raspberries)
Shredded coconut
Method:
STEP 1
Prepare the crust by combining almond flour, pitted dates, and shredded coconut in a food processor. Pulse until the mixture sticks together when pressed between your fingers.
STEP 2
Press the crust mixture into the bottom of a lined cake or springform pan. Use the back of a spoon or your hands to press it firmly and evenly.
STEP 3
Place the pan in the freezer while you prepare the filling.
STEP 4
In the same food processor (no need to wash it), combine the soaked and drained cashews, coconut cream, maple syrup, melted coconut oil, lemon juice, vanilla extract, and acai berry powder. Process until smooth and creamy, scraping down the sides as needed.
STEP 5
Pour the filling over the prepared crust in the pan. Use a spatula to spread it evenly.
STEP 6
Place the cheesecake in the freezer for at least 4 hours, or until firm.
STEP 7
Once the cheesecake is set, remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly.
STEP 8
Decorate the top with fresh berries and shredded coconut.
STEP 9
Slice and serve the Acai Berry Cheesecake chilled. Keep any leftovers stored in the freezer.
