Flourless Cacao Butter Mixed Nut Cookies

Ingredients:
1 cup mixed nuts (such as almonds, cashews, walnuts, and peanuts), roughly chopped
1 cup peanut butter (unsweetened and creamy)
1/2 cup Earths Basket Cacao Butter, melted
1/2 cup Earths Basket Coconut Sugar or sweetener of choice
2 flaxseed eggs
(vegan option: 2 tablespoons ground flaxseed mixed with 6 tablespoons water, let sit for 5 minutes to thicken) OR 2 large eggs (non-vegan option)
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup Earths Basket Cacao Powder
Optional: 1/2 cup dark chocolate chips or chopped dark chocolate (non-vegan option)
Method:
STEP 1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
STEP 2
In a large mixing bowl, combine the melted cacao butter, peanut butter, coconut sugar, flaxseed eggs or regular eggs, vanilla extract, and salt. Mix well until smooth and well combined.

Add the cacao powder to the mixture and stir until fully incorporated.

Fold in the mixed nuts and dark chocolate chips (if using, non-vegan option) until they are evenly distributed throughout the batter.
